Sourdough Neapolitan pizza course

Salt, water, flour, the true soul of pizza, and of course tomatoes, mozzarella, and basil. What do you need for sourdough Neapolitan pizza? A good dose of enthusiasm and a few tricks to make the best pizza possible at home.

During the program, everyone will learn the steps of making pizza dough: kneading, folding, and shaping.

They will learn how to stretch the dough by hand and how to make the cornicione, or pizza crust, crispy. Each participant will prepare three pizzas. We will demonstrate several techniques for perfect baking at home, and you can try out an AVPN-certified electric Neapolitan oven on site, which literally bakes pizza in minutes.

At the end of the course, everyone can take home a piece of prepared pizza dough, which, thanks to the long rising time, can be baked the next day; the pizzas made during the course; as well as a gift for further experimentation.

The course is led by: Adrián Fecske: pizza chef, artisan baker, and Tekla Pekarek, head of Csokolom Gastrolabor.
